Nandos Pasta Fakeaway Recipe: A deliciously creamy chicken pasta with a spicy Nandos style piri piri kick! Perfect for calorie counting or low-calorie meals.
Well, this was a bit of a triumph! As you may or may not know, I love creating slimming friendly pasta dishes, and am always looking for new ideas.

After recently creating my creamy vodka pasta recipe, I thought the spice and creaminess would translate well to something with Nandos flavour.
A decent Nandos Fakeaway is always a winner in my eyes, and now that I have perfected my own piri piri sauce, I can use it in this dish.
This is super easy to make, and only uses one main pan other than cooking the pasta. The beauty of making your own piri piri sauce is that you can adjust to taste to be as spicy or non spicy as you like!
Of course, you could also cheat and buy the ready made Nandos sauces to use as well. You could also try making this with my Nandos Lemon & Herb sauce if spice is not for you!
I used tagliatelle pasta in this dish as it was I had in the house, but you could use any dried pasta you like.
I usually make up a big batch of the piri piri sauce and either freeze it or keep it in jars so I have some to hand when I need it.

Creamy Piri Piri Nandos Style Chicken Pasta Recipe

You will need:
Piri Piri Sauce:
2 birds-eye red chillies (adjust according to personal taste, the more chillies the hotter it is!)
1 red pepper
1 red onion
juice of one lemon
juice of half a lime
1 tbsp smoked paprika
2 tsp salt
1 tsp black pepper
1 tbsp oregano
1/2 tsp red chilli powder
5 cloves of garlic
4 tbsp malt vinegar
4 cherry tomatoes
50ml water
Everything else:
200g Dried pasta of your choice
1 red pepper, finely sliced
1 red onion, finely diced
1 tub low fat cream cheese
2 large skinless chicken breasts, diced
Pinch salt & pepper
1 clove garlic, crushed and diced
Method:
Blitz all the peri peri sauce ingredients together in a food processor until it becomes a smooth paste.
Pour half the sauce over the diced chicken and leave to marinate for 30 mins.
Mean while, spray a large frying pan with low calorie cooking spray.
Add in the onions, garlic and pepper and fry off until cooked through.
Add in the marinated chicken, and keep cooking until it is no longer pink in the middle. Add in the remaining piri piri sauce and the low fat cream cheese and stir until it makes a sauce.
Cook the pasta pas per the pack instructions, but don't throw away that pasta water!!
Once the pasta is cooked, add 3 spoonful of the pasta water into the chicken and sauce mix. The pasta water helps to make the sauce extra smooth and saucy.
Drain the pasta then add it into the chicken and sauce mix.
Stir well, serve and enjoy!
